Ingredients
2 Cups Young coconut pulp
1 ½ Cups fresh or frozen blueberries
½ macadamia nuts or cashews, soaked 1 hour
¼ Cup pine nuts, soaked 1 hour
4 pitted medjool dates, soaked 1 hour
1 Tsp. vanilla extract
2 ripe bananas, sliced
Directions
Combine the coconut pulp, blueberries, macadamia nuts, pine nuts, dates, and vanilla extract in a blender, and process until smooth, thick, and creamy. Layer with the sliced bananas in parfait or wine glasses. Refrigerate for 2 hours before serving.
