Blueberry Muffins
1 ½ Cups flour (whole wheat)
½ Cup soy flour
2 Tsp. baking powder
1/3 Cup brown sugar
½ Tsp. cinnamon
Whisk together:
1 Cup milk (soy or skim)
2 egg whites
2 Tbsp. soy oil
1 Cup blueberries
Preheat oven to 350 degree. Spray muffin pans with non stick spray
Place flours, baking powder, brown sugar, cinnamon and whisked combination of milk, egg whites, and oil in blender or processor container. Blend for 10 seconds
Stop machine and stir the blueberries into the batter just until mixed
Fill cups Bake for 15 to 18 minutes
